5 or 6 lb. veal shoulder, boned Salt and pepper 1/2 cup cranberries 1 can tomatoes 1/2 cup raisins | 1 clove garlic 2 tbsp. chopped green pepper 1 tsp. salt 2 tbsp. olive oil 2 cups soft bread crumbs |

Instructions: |
Rub meat, inside and out, with salt and pepper. Halve cranberries and cook for 10 minutes with tomatoes and raisins. Fry garlic, pepper, and salt for 2 minutes in oil. Add to cranberries. Add bread. Stuff into cavity in meat; sew or skewer closed. Roast, uncovered, at 300 degrees for 30 minutes to the pound. |
